All tall barrel cakes begin from a 12 person dessert size cake and move up in size from there.

Amount of servings per cake depends on how big or small the slices are. Customers have a choice between Coffee size or Dessert size. Please keep this in mind when choosing the perfect cake for you. 

Cupcakes and mini cupcakes are sold by the dozen with 1 flavour per dozen.

Regular slice

Small slice

The Original

Mint

It's an oldie but a goodie! We all love an after dinner mint and so I decided it would taste even better rolled up into rocky road...The Mighty Mint is refreshing and leaves taste buds wanting more!

Salted Caramel

Australia has an obsession with salted caramel, so what better way to eat it with a mixture of popcorn, almonds and of course dark chocolate.

White Rose Pistachio

For all those white chocolate lovers out there, this one's for you! This beauty is filled with pistachio, edible dried rose petals, dried cranberries and squishy marshmallows. Delish!

Raspberry Rose

Last but not least, the elegant dark chocolate Raspberry Rose that is made to impress! This classy  rocky road is made with delicious dark couverture chocolate, slivered almonds, pistachios, freeze dried raspberry's for that burst of berry flavour and topped with fragrant edible rose petals...

 

Kids Cupcake Decorating Workshops

If you are looking to have something different, interactive, fun and entertaining for you child/ren at a birthday party or children's event of any kind, the late night baker offers cupcake decorating classes at your home within Sydney.

Classes run between 1.5hr - 2hrs depending on level of skill & engagement for a minimum of 10 children from the age of 7yrs. 

What's included?: Each child is provided with 6 homemade cupcakes that they will then decorate with coloured and flavoured buttercream, sprinkles, confectionary and sometimes with unicorn horns and ears at an additional fee. Each child will leave the party with a box of 6 of their very own designed and decorated cupcakes and a recipe for a basic cupcake and buttercream with additional notes personally written by the late night baker about how to make their future sweets taste even better!

  • the late night baker has a current Working With Children's Check, Police Check and First Aid to cover all bases when working with children.

Price for Kids Cupcake Decorating workshop: Base rate - $220

*Even if you have fewer than 10 children attending the class, the base rate is $220.  

  • Minimum no. 10 Children ($22 per head)

  • Maximum no. 12 Children (additional 2 children are priced at $25 per head)

Set up and cleaning fee: $80

Travel fee: Calculated at $0.80 per kilometre traveled to and from location as well as driving time of $20 per hour to and from location.

Cake decorating Demonstrations

Price: from $500

the late night baker offers Cake Decorating Demonstrations to high schools in Sydney during a double period or within 2hrs

What’s included:

  • Set up and clean up of demonstration

  • How to cut a cake

  • How to make American Buttercream

  • How to stack a double barrel cake with buttercream

  • How to apply ganache drip

  • How to apply decorations on cake

  • Completed demonstration cake included in price

Schools also receive a “How to stack a buttercream cake” booklet written by the late night baker, an easy Katherine Sabbath chocolate cake recipe and ganache drip recipe, as well as the the light bakers’ American Buttercream recipe along with how to flavour it. These are to be printed by the school and handed to each student attending the demonstration.


in-home private Lesson

Your choice of:

- Floral Drip Cake

- chocolate overload cake

- or painted buttercream cake with florals

$285 single or $500 for you and a friend (1 cake per person)

You will learn how to:

  • Make American buttercream

  • Evenly layer and stack a cake

  • Create semi naked buttercream look and get those sharp buttercream edges

  • Make chocolate ganache drip and use for a drip

  • Wire and tape fresh flowers to safely arrange on your cake

What’s included?

  • Pre-made cake

  • All other ingredients and decorations including cake boards and boxes

  • The use of the late night baker’s equipment - stand mixer, offset spatula, cake scraper, bowls

  • the late night baker cake, buttercream and ganache drip recipe as well as a ‘How to’ method document for you to refer back to whenever you need
